Saturday, January 7th was my husband's 30th birthday. We did not do much since things are a little different with a one month old. So I tried to make it as special as I could. If you asked him what he wanted for his birthday he would tell you that he wants to be a dad. I succeeded at that!!
While James was at work that morning, Kimber and I were busy making him a cake! (big accomplishment for me!)
My parents came down Saturday morning to see Kimber and of course us!! So that night we went to dinner at Maru in Ozark for sushi. James' parents and brother and my parents enjoyed a nice low key dinner. I forgot to take pictures from dinner. (did I mention how bad I am at remembering to take pictures)
It was so funny....my mom says to me "WoW Janelle who knew you could give birth and bake!" Two things in life I was not so sure of.

Enjoying the Beautiful Weather
Can you believe the weather we have had the past two days?! Kimber and I went for a walk yesterday and today, which was much needed! She probably did not need the hat today but I don't want a sick baby.
New Year, New ME
2011 was a fabulous year with the birth of Kimber but I am so excited about 2012!! It is going to be so fun watching her grow and develop. I have so many fun things planned for us to do. So for my New Year's resolution is to me an awesome mom to little Miss Kimber and a wonderful wife to James. Of course I have the typical goal of loosing weight but I have no choice. I don't want to carry this extra baby weight the rest of my life...I have until Memorial Weekend to be back into a swimsuit. (Ashley do you have our countdown started??!!)

Homemade Banana Bread
That's right I made a loaf of banana bread MYSELF! I had to call James and my mom to ask a couple of questions before I could start....
The recipe I used is from SimplyRecipes.com.
Yield: Makes one loaf.
- To James - I asked if there was a difference between baking powder and baking soda. The recipe calls for baking soda and we only had baking powder.
- To my mom - I took a pictures of the bananas and sent her a text asking if the bananas were ripe enough. Then I had to call her to have her explain how to measure out 1/3 cup of butter (I used a stick of butter).

Banana Bread Recipe
- Prep time: 5 minutes
- Cook time: 1 hour
Ingredients
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.Yield: Makes one loaf.
I recommend this recipe because it was easy to make and I did not dirty up a lot of dishes in the process. I had to bake it a little longer than an hour and I think it could of gone longer.
